As I understand it, with the Bose system the AP setting sets the "Adaptive" mode. It's not speed sensing but sound sensing. As the interior noise goes up so does the volume.

The fact that you don't hear the difference is exactly the point. It tries to keep the listening volume (the sound you sense) the same based on extraneous noise.
