Mine might touch the 0 when the AC is off but like yours the fan kicks in and it goes back down the the middle of the 8. I replaced my water pump back in December plus on the coolant refill (factory coolant) I added a bottle of water wetter. You clean your radiators? They often get filled with crap and that can impact coolant temps.
