I record and watch later (hate commercials). My preference in this order:

Wind Tunnel (does this count? )
NASCAR Sprint Cup (Go #48!)
Grand Am (Memo/Scott #02)
Continental Sports Car Series
V8 Supercars (NASCAR on road courses!)
IndyCar
Indy Lights (might be better racing than the top series)

Plus any car related TV show:

NASCAR Hub
Wheeler Dealers
Chasing Classic Cars
Fast and Loud (the Ferrari show was awesome!)
What's In the Barn? (motorcycles, but who cares?)
Fantom Works
Classic Pimp My Ride (Xhibit is hilarious!)
Etc...

I usually save V8 Supercars and IndyCar for the winter when there isn't any live racing going on. Otherwise, I'd go into severe racing withdrawals that would probably require heavy medication.
