Are there any switches that use the light that are straight on/off switches?

No.

If you want to to add footwell lights, it's easiest to just power them from the courtesy lights.

I think there is one type but I could be wrong. It has a symbol on it that is suppose to look like a light bulb. It looks more like an eyeball to me though. I believe it only came on the early cars that had a light on the visors. Very rare option. I just got a car in with one.
