Confused about dash switches - 1 or 2?

Been reading a lot on this topic, and have found conflicting info as to the number of dash switches required.

Pelican tutorial says that two switches are required. But reading thru this thread, several folks mention using only one.

Can someone please walk me thru this?

For both cases, what happens, exactly, when the various switches are pressed? Which switch does what?

Switches

I have made many OBC harnesses for a single switch and a few for two switches. I have never installed anything but the 4 Stalk assembly but I can add some data. A single switch will only let you step through the various views.....Temperature , MPG etc

Two switches should let you emulate a 4 Stalk and set the speed gong and reset some options....personally the 4 Stalk assemble just is not that expensive and I would go with what looks factory. 4 Stalks come up quite often for sale for under $150

adding a switch like that, to the same location of the 4th stalk, can be also a very interesting option.
