Most everything I recommend has already been said, but I'll throw in some of the smaller things that make the day better.

1) Duck Tape, at least one whole roll of good stuff.
2) Zip ties. A lot of zip ties.
3) Painter's blue tape (What I use for numbers occasionally, or if someone else needs them.)
4) Snacks that won't melt in the sun/heat. Even if it's not hot outside.
5) One of those cheap 30-piece tool sets, or a small bag with some of the common sizes of wrenches, pliers, screwdrivers and at least one solid hammer.
6) CHARGERS FOR EVERY ELECTRONIC DEVICE YOU TAKE. I can't say how many track days had a not insignificant amount of inconvenience added due to one of our cameras/phones dying.
7) Extra SIM cards for your cameras, if applicable.
8) I know it's a bit old-school, but chalk. I chalk my tires so see how the tires are doing.
9) Tire pressure gauge.
10) A friend.
