I chose 5 but really would prefer 168. Can one ever have too many? I think not.

I had 6 in my last 914- 3 behind the steering wheel and three in the center console....

I would like to have an oil pressure gauge and an oil temp gauge. So, I guess, 5.

Had both and prefer 5 but as long as the tach is in the middle I'm happy.

That looks interesting. I'm not 100% sure I like the "modern" look, but where did you get them? Is it an easy DIY?
