Ask for a check from the insurance company based on an estimate from the body shop that your local Porsche dealer uses. Don't let the insurance company send payment directly to the body shop. Once you get the check try and source the new part on your own and negotiate a good proce price from a trusted body shop. I wouldn't spend a ton of money on painting front or rear bumpers. Unless the car never leaves your sight sooner or later someone in an SUV will back into it again. I'm in for my fourth front bumper repsray and third back bumper repsray. Whatever money is left over send back to the insurance for your next premium
I would also ask for diminished value from the other guy's insurance. If this was reported to carfax you'll have fewer buyers as many will not touch a car with any "stories" as they call it.
