I have heard about the Porsche factory tours as well, but I have no information about how you arrange that. European (winter) weather being what it is, hard to say, but the further south you go the better the chances of finding some warmth I suppose. It will probably be 10 C warmer in Venice though than in Holland, but you never know til you get there.
