I sure wanted to, but there just aren't any really good ribs up here. Their idea is some pitifully cooked meat smothered in sticky sweet BBQ sauce. To get good ribs here, you have to have the Butcher cut them special and do them yourself, slowly, on the grill and that's not yet in season here.
When I lived in Chitown, we always went to Clarks Ribs for both sitdown and take-out - those were some good ribs - are they still around? (

Country Tavern is just the best I ever had in TX, and their walls are lined with pics of celebrity clientele - most every Dallas Cowboy, TX Gov., several presidents and such. It ain't fancy, just a big steel shack, but it sure is good.
Picking the best ribs in TX is a difficult task, there's LOTS of stiff competition. But the Country Tavern has been doin' ribs since
1939.
A bad rib joint in TX just isn't gonna last that long, especially in a small out-of-the-way town like Kilgore.
