Spec racers question,... plastics...
So do you guys run the wheel well liners?
How about the undrertrays?
yes or no, issues to be addressed if removing them?
I.e. any critical areas to be protected, or waterproofed...?
Yes driving this car on the street, and mostly will not see rain...
(probably, since it has no top now.lo.)

The spec racers that I have seen leave those parts in. Any weight saving is negligible, those parts do serve a purpose for aerodynamics (very important) and keeping debris out of places it shouldn't be.
Is there a reason that you want to remove the parts?

just curious, and chasing rattles...
and my car isn't doing more than 80-90mph, so areo is negligible that slow anyway.
Just a question really.

Yes we (mostly) keep them. The bottom ones mainly to protect the crazy fragile power steering lines in case of an off, and provide a nice smooth aerodynamic bottom to the car. The wheel liners protect the radiators from damage. we usually cut holes in them and protect with mesh to provide better air flow through the radiator and to the brakes.

As others have said, the under tray and wheel liners are usually left on the car but there are probably no ill effects from removing them except for the potential for rock damage.
I have seen the vents in the front of the wheel liners but I am not sure how well they really work in getting additional air to the brakes without any directional ducting.
If you really want to cool the brakes more, install the GT-3, GT-2, or 981 brake ducts or fabricate customer units which pull cool air from under the car and direct straight towards the brakes (rather than just generally into the wheel well).
