I'm not going to judge...

So, IF I was going to do this as cheaply as possible, I'd start with a pair of these eBay seats and then have a local upholstery shop re-cover them in grey and add the plaid inserts.

Total: $490 for the pair of seats + ~$200 ea upholstery = ~$900 for a very custom look.

To answer the initial question:
I have knck-off GT3 seats in my car all summer and find them actually pretty comfortable
The fact that the seat cushions are attached (and can be also opened) via Velcro also allowed me to fabricate my own lumbar support (out of a piece of foam padding) and to install seat heating (from a cheap eBay kit)

I love the idea of recovering them. What ideas do you guys have besides plaid if I were to recover them?

If you like old school don't know about cost, the sport bucket, harder leather recaro seats they used to put in the 944 were pretty sweet. I would think the seats you pictured would lack support and in a car as capable as a 986 you would slide around a lot.
