My guess would be aerodynamic lift, the car actually is getting "light", combined with the fact that steering inputs are "amplified" at higher speeds.

Going back to this REALLY old thread, I'm having the same issue with my 2001 "S". I also agree that it feels like an aerodynamic lift. Not a great feeling. I wonder if the spoiler extension at 75MPH has anything to do with it.

You could pull the spoiler fuse and try it with the spoiler down to see if it makes any difference. You'll get a rear spoiler fault on the dash but it will clear the next time that you start the car. Just remember that the rear spoiler is there for a reason...

could be an alignment issue?

Clearly remember Steve Alarcón questioning, which track are you going to run..?

Basically regarding if you wanted a quick steering or stability at high speed
