Coolant Flow issue

Any help would be great: Replaced water pump and went to fill and bleed the coolant system it only took 2 1/2 gallons versus the 5 it is supposed to. When I turned the engine on to warm it up and start the bleeding process car temperature gauge does not move stays at 100. Could it be the thermostat or could it be air in the system? Porsche Boxster S 2006
