The coolant light blinks every 3-4 months and I add 4-8oz of coolant or water to make the light go off.
I don't see any coolant leaking on the floor and I don't smell anything like burning coolant not do I have white smoke on startup.
It is normal to have to top off the coolant like this? From what I gather it is not. What could some potential problems be that I can check?
I am considering driving this car cross country later this summer and I want everything attended to that can break so I am planning extensive maintenance on it: AOS, coils, plugs, injectors, sensors, filters, oil.

Short answer no.
The coolant tank in the trunk are a know problem with these cars.
They get hairline cracks with age. Then they leak while under pressure.
Pull the carpet and the sub floor, everything tell you are down to steel in the trunk floor. Look for signs of coolant and coolant smell in the trunk.
A coolant pressure test to diagnose the issue would also be a good idea.
Either have a shop do it or go to Harbour Frieght and but a coolant pressure test kit.
they are around $90.00 works on any coolant system you can also test the coolant cap with them.
