I drive in the summer with the top down and AC on. However I am on the left coast and our weather is also directly opposite yours most times, Hot and dry. That being said, I would think your biggest issue would be to keep your AC drains clear so the torrent of water from the high humidity will have a place to go!
Otherwise no problem running the AC.
