Could work on the seat inserts too since it will be softer blend than going full on white. So you have a "theme" of white/black/grey with hints of white stripes here and there.
All of that white is a lot to take in, which is why I've been on the fence for about a year, now.

I still plan to do the door pocket covers in leather with white edging and maybe the door handles upper trim piece, so something more subtle may be best for the seats.
I like your piping or edging idea.
