I've got a Springer Spaniel that rides with me all the time.
I got a blanket that I keep in the rear trunk and use it to cover the seat. Also ended up using an old pillow to lay across the console, since "Jake" lays down from time to time. (Before the pillow, he was starting to lightly scratch the console between the seats.) The pillow makes shifting slightly awkward---one has to kind of arch your forearm and elbow over him, but it's not too bad.
First time I had him ride with me (ie pre-pillow), he lays down and next thing you know both windows were randomly going up and down, seemingly of their own accord. Kind of freaked me out at first, since I didn't know
why it was happening. (My pre-Boxster DD was---and sometimes is still---an old Camry, so I wasn't used to having the window controls anyplace but on the door.)
Anyway, got the pillow and problem solved.
Fragdude, sorry but I got no suggestions. You could try the pillow trick, but she's got a lot of size on Jake. (I think her front legs would probably end up draped across your lap.) Good luck.
