With the installation of the Bilsteins, is it possible to vary the height or is it fixed as in the photos?

it would need to have adjustable coil-overs to have height adjustment. Shocks/struts by themselves do not change the car height

My guess is the springs are probably shorter and that why the car is lowered

Correct, the shocks and springs are shorter than stock which is what lowers the car.

The car does not rub at all, even when making U turns. Only steep driveways and big speed bumps are a little bit of a concern.
