Shelf life fo power steering & brake fluid

If un-opened would you use 5-8 year old cans of fluid to replace your brake and PS fluid, or just spring for it and purchase new? I bought these many years ago but the car shortly after went into storage .. it's coming out now and I'm doing some much needed fluid flushes.

The unopened PS fluid should be fine, the brake fluid is questionable. Unless you have a moisture content tester, I would throw the brake fluid.

For the price of even racing brake fluid it safer to just buy new.
