Cool. Thanks everyone for the great feedback. Not sure if I'm going to keep it but I'm going to do a few more pieces while I make my decision.
All I did was cut the leather to the size of the trim with about 1" over hang on all sides. I used 3M Super 77 spray adhesive. I sprayed both the leather and the trim piece, allowed both pieces to get tacky (about 30 seconds) and then applied the leather to the outside of the trim. I made sure everything was even and smooth and then started tucking and trimming the back side. I pre-cut some relief points before I started to make the tuck process easier.
I still need to do the other side so I'll do a write up and take some pictures of the process.
