I'm curious, do you have pics of the specific headers you tested? I'm curious to know if there's much of a difference in piping diameter or if the only real difference is the lack of cats.
Also, did you make any intake adjustments between the test? Maybe I missed it, but what intake setup did you use?
Also, for your AFRs, it looks like you're running around 11ish? That's standard programming for our ECU to run at WOT (or at least that's what my 996 tune does). It will be quite tricky to tune that out without altering the maps.
