Make sure the bleeder valve is open. Sounds like you had a airpocket in the coolant passages that burped out when the temp got to hot.

Uview is a vacum filling tool that should prevent air pockets in coolant passages during initial fill. Any shop doing this work should use it to prevent what happened to you.
