You seem to be on top of your game in electronics. Quick question for you:

Would a 1) oil PSI, 2) BATT voltage and 3) Coolant Temp readings be possible converted into a digital format? e.g. displaying this onto a 2 row LCD panel.

I am thinking about using an Arduino microcontroller and capturing the analog values from each sensor and throwing this digitally to a LCD panel nicely embedded in a faceplate (anodized aluminum with laser etchings type thing).

I already love the idea of the needle gauge style but if I could think of making it look a bit more modern then I'd take this route instead.

What do you think? feasible with a bit of passion? Perhaps you could spare us the energy and design something in the like (arduinos cost $15 each!). You could sell many of those kits to other member I'm sure
