Really big brakes make these cars go really slow, avoid them. Stopping distance is mostly a function of weight and tire grip so drop weight and mount stickier tires for shorter braking distances.

For brake heat management, improve cooling, run Motul 600 fluid, and use ST-43 pads for unrivaled performance. This should get you through a 24hrs of Daytona race.
