How about the pedal's travel? Does it come right back up with your foot when you lift or is it kind of slow? I'm wondering if your input behind the gas pedal is worn out/gummed up/out of adjustment and the throttle is reacting accordingly as though you were slowly lifting off the throttle instead.. I don't have e-gas experience, but that's what comes to mind thinking about it logically.
