With the 2.7 and egas, I'd go with a 3.6 or money permitting a 3.8.
I have a 3.4L in my 99 with the original 5-speed which works fine. The only complaint (and it's a small one) is that I wish 5th gear was taller because with the the 3.4 it's too short imo. I think I read on the forums that the 2.7 5-speed is geared a bit taller in 4th and 5th than the 2.5 so you may not have this issue.
