What is the best fuse to hard wire my radar detector? Would like it to power off when key is removed

If you don't have heated seats, there's an open slot for that with plenty of amps. I don't remember what number, but it's in the first row. Your hardwire should have its' own fuse so as long as the slot in the box has enough for that you're golden.
