How do you flip it? If I undo the two nuts, the shaft still is not able to be removed?

The lever is held on with a bolt and nut in the anodized counter lever. Just take out the bolt and flip the lever.

This is one of Che's shifters, it has a nut on each side with a stud connecting them... Not sure how to remove the stud?

It threads into one side. It unscrews. Just don't ruin the threads getting it out.
