I have no issues (symptoms) that tell me the alignment is bad - other than the steering wheel is a shade off center ... is this worth the time of have an alignment done to correct this or is it possible to do what I did with my MGB: remove the steering wheel and set it back on the splines, centered?

Appreciate the thoughts on this:)

It is indeed possible to remove the steering wheel and reset it so it is centered. There are several DIY threads on the subject. Just made sure you disconnect the battery so you don't set off the air bag light.

As far as having an alignment completed; it may be worth the money. Many times you won't know your alignment is off until the tires let you know by uneven wear.
