I have no particular repair shop info to pass along to you, but you should do what I did... hang out at a local dealership right after their service area closes and ask an exiting mechanic if he works on cars at home or who might do this at the dealership.
Most of them want tax free income and moonlight because the $60-90k a year they make as a Porsche Technician just isn't enough.
My tire recommendation is simple. Michelin PS2's. Not cheap, but worth every single penny. They remain true throughout their lifetime on your rims (no vibration) and will give you excellent grip in dry and wet weather. Of course, they're not good for cold weather under 40 degrees because they're ultra performance summer tires, but that's the case with any decent tire for our cars.
