I just did a track day this weekend in my bone stock 2000 2.7 and the water temp never got above 104C and the oil never got above 108C. This was during a 90+ F day, running 25 min sessions at Homestead. But I wasn't winding it up to the redline before every shift either. I was in the 4500 to 6500 range the whole time.

How were you measuring these temps? Where are you senders located?

Durametric, right after every run. I would say within less than 5 minutes after being on the track.

at the end the only thing that really matters to me is the oil pressure
When it drops below 3 (bar) ~ 45 PSI then I start to get worried... normally it's around 4.5
