How can you find out if you have a single Or dual row IMS without taking it out of the car? Can you find out by just the year and serial number of the car?

There are no guarantees, and some will suggest you have to disassemble to know for sure. That said, see the chart in this technical article: Pelican Technical Article: Boxster Intermediate Shaft Bearing Replacement and Upgrade (IMS) - 986 Boxster (1997-04) - 987 Boxster (2005-06)

No. 1997-2000 (some) had dual row bearings, 2000-2001 were a mix and you have to take the car apart and visually inspect the IMS, 2002-2004 were all single rows, 2005 was another transition year with a mix of serviceable single rows and non serviceable over sized bearings that again required a visual inspection, and 2006-2008 are all non serviceable IMS bearings.
