Oil starvation?
Often when I am working in the car I will have the back end up on ramps. Is it a risk to start and run the motor at this extreme angle? Do I risk oil starvation because the pick up can't get oil?

Not likely. The major oil starvation issue is due to extended lateral Gs such as skidpad testing where the oil pools in the outside head.
