Coolant Flow issue

Any help would be great: Replaced water pump and went to fill and bleed the coolant system it only took 2 1/2 gallons versus the 5 it is supposed to. When I turned the engine on to warm it up and start the bleeding process car temperature gauge does not move stays at 100. Could it be the thermostat or could it be air in the system? You have air in the system. Either go thru the manual bleeding process, or use a vacuum fill (the quickest and least troublesome approach) system to remove the air and properly fill the system.
