Parking lights...
 
When I turn my headlights on one click (parking lights). It puts on all of my normal running lights and dimmly lights up my passenger side headlight. Is this using a different bulb than my headlight bulb? Should both of my headlights be lit up when I do this? On all other cars I've owned it doesn't turn on either headlight so I'm a little lost...

Yes, they should both be on . They are a separate low wattage bulb.

Is it just like a little 194 wedge bulb or something? Has anyone replaced them with a different color bulb or more of a bright white HID-look bulb?

I put Slyvania Cool Blue bulbs in over the weekend, 16.99 each at Pep Boys which were supposed to give them a slight blue look, I do not think they look much different. They dimmly light up at the first click / fyi.

It's larger than a 194 but not by much. your manual should indicate what bulb number is used.

I have pure white LED bulbs in mine. In the UK we call them side-lights (even thought they are at the front and rear, not the side!!) and are used when you need lights to be seen, but not to actually see, if you know what I mean.

Wedge Bulbs
 
I put in the PIAA wedge bulbs....they are listed as #164 or #172, it doesn't matter the sizes are NOT different. Just bring your bulb in and ask for a wedge bulb replacement, look cool. I also upgraded to the Razzi Super White Bulb for $79.00, looks great just like HID rated at 4550 Kelvin (still only 55watts)
